Non-pareilles capers are the smallest and most desirable variety of capers. To be considered a non-pareil, the caper cannot measure over seven millimeters. Non-pareilles are picked off the capparis spinosa bush early to keep their small size. The French coined the name non-pareil (meaning “without equal”) because they consider these small capers to be the finest variety by far.
Capers are frequently used to add flavor to appetizers. They are also wonderful when added to sauces and main dishes, especially veal, pasta and fish entrees. Try topping traditional deviled eggs with this tiny vegetable to a delicious update to a classic recipe.
