Cheese is priced and sold by 1Lb pieces unless noted in the description (i.e. wheel, pc, loaf or ball).
When you add a 1 to you cart box you will get one 1Lb piece.
If you want two 1Lb pieces add 1 to your cart then add another 1 again.
If you add a 2 to your cart, you will receive one 2Lb piece and so on.

    Black Label Extra Aged Appenzeller represents the characteristics of the people of its home region in the Alpstein.
    It has a robust and hearty character, is sometimes a bit sharp but still very well balanced.
    As the cheese ages, the cheesemakers search for the very best wheels and store them in a damp cellar at around 14 degrees Celsius to mature them for at least 6 months.
    This process creates a cheese with a unique flavour, a must have for those who love tart cheese.

    The mildest of all Appenzeller's
    Type: Cow's Milk, pasteurized; firm, inedible rind.
    Characteristics: Ivory colored, small holes; spicy, fruity, tangy flavor; strong aroma.

    The wheels are washed frequently and aged for a minimum of four months, until they develop an herbaceous, nutty flavor and a smooth, milky finish. Appenzeller goes well with a red Burgundy.

    Challerhocker Lb

    Created by Walter Rass, the master cheesemaker at Kaserei Tufertschwil in the canton of Saint-Gallen, Challerhocker is a twist on traditional Swiss cheese.
    The recipe is based on Appenzeller, which Walter, as a second generation producer has many years of experience making.
    Lb Pc Despite its similarities, Challerhocker differs considerably from Appenzeller due to changes in the recipe (the temperature the curd is cooked at, the fact that Walter chooses not to skim the fat off of the milk, and aging time). Unlike most producers in Switzerland, Walter likes to make his own rennet rather than relying strictly on the commercial type.

    It is characterized by the large holes that are caused by non-removed carbon dioxide bubbles during production.
    This cheese comes in multiple varieties throughout Switzerland and the rest of the world.
    The two most popular Swiss varieties are the AOC and Premier Cru, both of which consist of different aging periods and techniques.
    Emmentaler cheese is partially skimmed, low sodium-50mg per oz, unpasteurized cow's milk.
    It is relatively firm and has a natural rind.
    It is typically yellowish-tan in color and has a mild, nutty, fruity flavor.
    Try it with sliced tomatoes on a reuben sandwich, in a French onion soup, or in a cheddar fondue.
    If you're looking to pair this with a wine, try a red wine that's light and fruity.

    Vacherin Fribourgeois is a hearty and potent Swiss cow's milk cheese with a semi-soft to firm texture, depending on age. It's best when added to any potato or pasta dish. Goes nicely with a nice Bordeaux.
